Threw an experimental DJ of the on last week, I'm hoping for an alco-pop style drink, for the summer BBQ season. Around 6% - 7% hopefully.

Ingredients:

  • 12 Unwaxed Lemons - Grate the rind, juice, and put the skins in the pot too! 3.2g of sugar per 100g, so as I used 1200g, that's a total of 38.4g sugar.
  • 490g of Sugar
  • 1 tsp Glycerin
  • 1 tsp Pectolase
  • 1 tsp Citric Acid
  • 1 tsp Nutrient
  • 1 tsp Yeast - Youngs again, I think!
  • 1 cup of 3 bag black tea.

As above, I'm hoping for 6% ish, and with total sugar content of 530g ish, I shouldn't be far off.

Racked to a clean DJ this afternoon after a week of strong activity, still the odd bubble, so activity is still around, albeit slow.

I'll be leaving it for another week, and then racking again to take it off the last bit of sediment/lemon. Then, it'll be left to condition in the DJ for a month or so, before being primed and bottled.
 
I've made this in 25ltrs. Using 2ltr lemon juice, 2kg sugar and youngs high yeast.
