After the Dunkle couldn't help myself!

1.8kg Pale malt extract
1.8kg wheat malt extract
37g saaz @boil
20g saaz @30min
20g hallertauer @50min
110ml liquid Weissbier yeast

Dissolved all malt extract in 6 liters of boiling water.
Added the hops as per the schedule above.
Transferred into fv straining out the hops and cooled the wart. Increased length to 23l.
Pitched the yeast at 15.6 degrees C.

Saved 1.5l of wart and 10ml of yeast for batch priming when fermentation has finished.
 
Today I cropped some yeast off the top of my brew.

Initial cake that was formed I scooped off, well it was 3.

Then the cake took on a gloopy consistency and the gravity was 1025 roughly half way to finish fermenting. So it went into a sterile jar and I have topped it up with sterile water. Not sure how much I have got yet.... and I hope its good!
 
Bottled this today...
This was batch primed with 40g of wet yeast harvested from a previous brew, which was kept in the fridge under sterile conditions.
I added 1.5 L of wort (sterile) which was held back from the initial boil.
Added some yeast nutrient, the yeast and the wort.
Then bottled using my new bottling wand, which is a bloody time/ beer saver!!
Got 39 bottles which was 500ml short of 20L.:-)
 
Beer test... This one is a winner.
Good head retention, banana and clove flavor, more clove.
Nice dark straw colour.
Will do this one again but will try dried wiessen yeast this time to see if there is any difference.
Not sure if more bottle time would improve the flavor, but we will see...

i'm jealous, banana & clove that's what makes a weizen.:mrgreen:

here's my notes:

14/03/2015

4 litres of Tesco chase spring.
500g wheat crystal malt steeped for 30 mins at 65 deg c. in 3 litres .
Used 1 litre of boiled water to keep temp at 65 deg c +
then added
1 kg spraymalt wheat
2 kg light dme

15 g amarillo & galaxy 15 mins boil (in muslin bag)
45 g amarillo & galaxy (in muslin bag) at flameout then stir for 10 minutes 5 minute hop rest

After boil, stir and hop rest poured wort,boiled and flameout hops into fv and
topped up to 21 litres.
yeast (safbrew wb-06) pitched at 28 deg c.
1.058 og calibrated to 20 deg c

remove hop bags in 5 days (19/3/2015)
wait 4 days then dry hop (23/3/2015)
40 g amarillo & galaxy for 5 days

28/03/2015

FG 1011 adjusted for temp
130g brewing sugar

6.17%

17.5 litres bottled

Gravity sample taste, bitter and fruity. Not too sweet.

plenty of carbonation, orange and tropical fruit, plenty of bitterness needs to mellow a bit,

bitterness blending well, orange aftertaste - beautiful.

Just had one about an hour ago. so tasty. :drunk:

Wow pitched at 28 Deg. C must have had a banana fest at that temp!!

ambient temps between 18-21 deg C, must have cooled down the wort before the yeast really got started.

in south wales the temps tend not to be too extreme one way or another.

I lust for banana & cloves in a hefe weizen.

Paulinger is my fave. I have already surpassed Erdinger with my wit? non Cherie.

As for weihenstephaner, their taste is unique.

Schofferhofer Hefeweizen is probably one of my favorites along with Schneider weisse and then Huber weisse fantastic beer!

aldi's used to do Scofferhofer a couple of years ago at 99p / £1.19

it was really nice as for Scheider & Sohn, their aventinus is the king of wheat based beers. :-)
