Dear All,

I racked a batch of Brewferm summer ale in October last year and dry hopped it with cascade and goldings. I thought it had become infected and so I lost interest and it sat racked in the garage all winter. I took the lid off gave it a sniff & barrelled it last week.

Superb pub quality ale with great conditioning and lacing. Crystal clear. The long wait did it no harm.

Nice one.

I notice a lot of people I see seem to think they have an infection after dry hopping. I wonder if it is the initial overpowering hit you can get from it makes people think its gone Pete tong

Good point Covrich. I racked it the same time as a Dunkel late summer/early autumn when the fruit flies were at their peak form the rotten apples in the garden. I lost the Dunkel. It went off giving me 20 pints of rancid vinegar.

You're right about the initial aroma from dry hopping being strong but that time it was suspect.

Just goes to show racking for 6 months doesn't hurt
