rhubarb wine bitter ?

guys i have tried my hand at making some rhubarb wine from

1,5kg rhubarb
1,5kg sugar
1 tsp yeasr nutrient
3 liter of water
1 packet yeast
250ml grape juice concentrate

The method i have used is to put rhubarb in a bucket then add the sugar on top and leave for 3 days.

after the 3 days strain the juice and add 3 litres of water to the rhubarb and wash it off into the juice

Then put the juice in another bucket and add 250ml grape juice concentrate the yeast nutrient and then a Campton tab
then wait 24 hour and add the yeast and leave for a week.

during the week i took a lil bit out to taste and it was lovely sweet and a lil fizzy , after a week i syphoned the wine into a demijohn it has now been in the demijohn a week and a half and i though i would try another lil bit when i tried it ahh it was horrible bitter and made your mouth shake can i ask this normal in the early stage and will this go in time or is this wine ruined
