Popped on a cheeky Rose stylee wow tonight

6l asda red grape
6l asda pressed apple
1l strong tea
5kg sugar
5tsp pectolase
Topped up with water to 25l
5g Gervin GV2 red label yeast

sg 1.100
est abv @ fg 0.990 = 14.42%
yeast pitched at 26deg
 
interestingly I used a 5g sachet of Gervin yeast as I'd run out of the Youngs stuff I usually use. It's cracking on just as it usually would but with just 5g instead of 5 heaped teaspons of the Youngs stuff... makes me question why the Youngs needs so much more put in

anyone scientific (or not!) know why that is ?

The tub says use 1 heaped teaspoon per gallon, i use a level teaspoon and have never had one fail, i only use 3 teaspoons in 22.5 litres of wine and again it has never failed, i imagine they tell you to use 1 teaspoon per gallon so it doesn't fail and also it means you use it faster.
