I have had a hit or miss experience drinking saisons but think duponts is delicious.

Has any body come across a good clone recipe for it?

Also, I notice there is yeast in the bottle. Would it be worth trying to harvest some or is it just re priming yeast?
 
IIRC they reseed with a neutral yeast at bottling.

Something like 86% Pilsner, 4% Carevienne, 1% Caramunich and 8% table sugar will get you in the area. The Dupont strain is available as Wyeast 3724 - Belgian Saison or Whitelabs 565 - Belgian Saison I. Ramp up the temp to high 20s/low 30s towards the end of the fermentation.

Hops are Styrian Goldings for bittering and East Kent Goldings for flavour and aroma additions.
 
Dupont uses 100% pilsner with dextrose in the boil.

They use primary yeast in the bottle so you can grow it. I've done so and used it successfully. The brewery uses multiple strains but the strains you can buy from Wyeast and White Labs are single strains from that mix and prone to stalling.

Nobody quite seems to know why it stalls but you can start it off really high without getting fusels. From what I've read you should get it hot and then once you've done that don't let it cool down. It's good for brewing in the summer.

I was quite conservative when I used it and started at about 25 and ended at 30 but the brewery starts at 35 which sounds like lunacy with any other type of yeast.

There's a clone here and you can sub out any of the candi sugar with dextrose or table sugar. If i remember rightly the guy who wrote Farmhouse Ales said the hops are at the start of the boil and 5 mins before the end whereas this recipe has flavour hops at 30 mins. I don't know which will get you a more accurate flavour.

I was shy of trying Saison, the description of the flavours put me off. Then I tried the revisionist saison from Tescos and really liked it. Enough for me to want to try and brew one. I'd like to try the dupont (and maybe harvest the yeast), where did you get it from ?

I am in Bristol and it is pretty easy to come across. There is a Belgian beer pub in the centre and plenty of offies and specialist drink stores near me.
