Hi

I am new to wine making (but not to drinking it!)and have started out with these high end kits and just wondered if anyone has had any experience with them??

I have made the australian chardonnay and it tasted good after the final racking (i put a bit left over in glass in fridge to try!!) but i think the reds are going to need ageing for quiet a while
Currently have 3 x selection aust chardonnay
selection Cab/Shiraz
Eclipse Barrola
Eclipse Stags Leap Merlot
Eclipse Lodi Ranch Cab Sauv
 
Sounds like your off to a good start! I've made mostly World Vineyard kits. Reds at the eclipse level should be able to handle a bit of aging. Perhaps six months or so to start with if you can wait that long. I've had an eclipse Pinot Noir I believe that was aged a year or so and it was very good.
