Yes, I add a bit to witbiers and saisons. It reduces the PH of the mash.

....because you want the PH of th mash to be between about 5.1 and 5.5 (according to Graham Wheeler) although I undersand 5.4 is the PH your aiming for
Using acid malt as 1% of total grain bill will reduce the mash by 0.1, 2% by 0.2 and so forth.
