I found this at the local offie on the bottom shelf stuck at the back.

It's cellar estates (address says bottled in Italy) it's sparkling rosso and pretty sweet. First pic is hydro reading of the must itself.

So on a whim I added this plus AJ sugar and polish cherry syrup until gravity reading says around 9% mark.

Going to pitch girvin restart yeast into it as the must was 4%abv and see what happens.

I'm a little bored.

This one is racked and clearing well with kwik clear. Smells nice.

Will taste and bottle tomoz.
