Slightly Sour taste

I have been brewing for a while now but often have a slightly over-bitter or sour taste to the brew. I notice that some folks recommend not sterilising for too long, is this to avoid an aftertaste? I normally leave steriliser in my brewing bin for 24 hours to make sure it's done properly. Also I leave a drop of steriliser in each bottle to keep them fresh. Is this wrong?
 
I sanitize with VWP for an hour max, usually for 10 minutes, never had an issue. Usually rinse three times
 
always use bleach,once the FV is empty it sits in the bath full of a weak bleach soloution and in over 600 brews only had one go bad.coopers recommend it in their kit instructions,i then rinse out on brewday and scald with a kettle full of hot water
