Help with rising temp within the first 3 days

Hi All

JUst needed some advise on temp control with some coopers yeast with a adnams clone im brewing (15L) coopers yeast
i pitched at 21c on saturdday,but it krept to 23 by the following morning, so i got an ice bath going but it cooled down to 17c over just a few hours. got the fv out the ice bath and let it get up to room temp gradually.
This morning it was 23 and creeping to 24c.

question is do i attempt another ice bath (with better monitoring to 18/19c range, or just leave it as im concerned from previous threads temp fluctuations can stress yeast and cause off flavours. i have read this yeast has good tolerance so it worth trying to change?

its the second day in from pitching (thought this was an important bit):-?
 
I tried the ice bath last summer with S04 and similarly to you my fluctuations were all over the place which lead to off flavours. When I was kit brewing I only every had one problem with heat and coopers yeast which lead to a diacytly bomb but diacytly conditions out so the beer was drinkable. Never had fusils with coopers yeast (which aren't condition out-able). I'd leave it if I was you.

If you can get your hands on some, Mangrove jacks work horse or mauribrew 514 yeast has temp tolerance to 30C. I bought some 514 off ebay 4 quid with postage from latvia. Of course you can re-pitch your way through summer so ��£4 isn't really much spread over several brews

ive read the coopers can tolerate a max 27C but not sure how true this is (some aussie forum) but i still thought be best to get it down within the 72hr phase.
YES! i noticed you mention these yeasts on another recent thread. i will look into this for my next batch as this will make life making beer in warmer than normal climates alot easier.
Wish id left it alone now, im still within the 72hr mark so fingers crossed all will be ok.
is it worse for a quick temp raise fluctuation than a quick temp drop? or are they both considered bad either way

Either way. I dont think yeast like to move between one temp and another quickly.

The temp tolerant yeasts are great. You can just chuck em in and forget about em. I used 514 last summer after faffing about with water baths. I have a brew bag now t control temps but I've got 2 FV's so, one FV will get the 514 used in it again
 
OK well fingers crossed. How do these yeasts you mention turn out? (flavours/sweet/dry) They sound like a godsend for these hot days for those (like myself) without a fridge.
 
Mauribrw 514 is an Ale yeast. The attenuation is high, 80% iirc. Because it was quite warm when I used it last year (probably got to about 27C-29C in my FV) it kicked out loads of esters. These tasted of dark fruits (plums, red grapes etc). I used it 3 times on the trot in a dry stout and the esters went perfectly with a dry stout

MJ Work horse is quite clean, again high attenuation of about 80%. The workhorse yeast is now discontinued by MJ but you can still buy it at Get er Brewed

Both had medium flocctuation so required a bit of cold crashing. I just put my bottles in the fridge for 24hrs before drinking.

There is also a liquid yeast with a high temp tolerance WLP008. This article say you can use it up to 32C (near the bottom of the article)

I think in that first 72 hours you may see some changes because often wort is still cooling to its current temp it is sat at and fermentation will increase the temp somewhat.. its more volatile with smaller batches.. I think as long as there isn't huge spikes .. I think it hanging around 22-23 isn't the biggest disaster and will be just fine

sadly its a 15L batch but its only had one spike with me cold crashing it, last i noticed this morining it was bubbling away healthily (hopefully healthy and not un):-?

I seem to vaguely remember buying it from there last year but I normally but my ingredient from Get er brewed. �£3 for yeast is good. It's about the price of Mangrove jacks yeasts and of course you can re-pitch to spread the cost across several brews
 
im trying to order some but its making the subtotal a whopping £9.50! I must be doin something wrong,
 
I thought that but called them up and the old chap there said theyre was a lower cost for below 1kg items.
