Found a local crab apple tree, no leaves just plastered with apples, picked 10lb, only used 2.5kg for a gallon, might add a few in cider later in month. Washed and stalked, blended with boiling water over them and into bucket with 3 camden tablets. So far nothing else added, but tommorow will add 2 tea bag cup of tea, tsp of pectolase, nutrient, harris yeast and a kilo of sugar split 0.5kg in bucket and half when transfered next week to dj. Recipe says 1.5 kilos of sugar but think thats to much. Taste and time will tell.
 
Added the yeast etc, been days to get the camdens out, signs of slight ferment and now damaged the seal on the bucket (I hate buckets!). Will leave now for another week before tranferring to dj.
 
Finally fermenting, started since saturday but bucket not sealed and no activity visable in airlock, just crossing fingers that no wine flys get in.
 
OK no flies got in strained into dj, although had too much water in there for a gallon, added 120g of sugar to dj to compensate for losing sugar in extra 1.5 ltr of extra fluid in bucket, might have to add more later.
 
Just took a reading of 0.994/5 tastes like a strong bitter cider, not enough alcohol so added 100g of sugar as that's all that would fit in dj, should increase abv by 1.1% so hopefully with previous sugar will add 3% and bring it over 10% if not already.
 
Still fermenting, took reading sg 0.997/6 so has worked through most of the additional sugar seems to be slowing 10-14 days more before racking. Orginal recipe suggested a year in the bottle for malo/lactic.

Not sure its still in primary as still at 0.995 co2 is being released, might have started secondary, also wondering if like cider it tends to remain above 0.990. Also considering that there was much more sugar in the apples and dj than estimated so higher abv' and therefore much slower.
 
Just racked, very dry to taste and strong, begining to melow, but still has the sharpness of the crab apple as well, will try and keep as long as possible in the dj before bottling.
