Hi folks,
We had a reasonable crop of Apple's this year. Turned 8 chicken feed sack fulls into 23 gallons of great tasting juice.
Hydrometer reading 1052
Unfortunately though I only have the acid papers to test ph, these are the rather ambiguous 1-11 type, not the 1-4 so possibly not a reliable test? They are showing ph4 which apparently if true will produce a very bad tasting cider?
Please could anyone with some knowledge of this please give some input, is there anything I could do?
The apples were pressed this afternoon and I've just added 1 campden tablet per gallon.
Thanks for looking, J.

A pH meter is far more accurate than papers but they need to be re-calibrated regularly and it's easy to forget. A recent batch of wine was reading pH 2.9, but after adjusting the meter, it read 3.3.
