If a recipe states to rise temp of mash for 15 mins and mash out how would this (if at all possible) be done when using a cool box style mashtun?

I am not sure what process you'd do it with a mash tun other than drain the wort into the boiler and return to the tun..??

With a normal mash and sparge do you need to bother with mash out??

I do a mash out myself but we are talking full biab
 
It's essentially a stepped mash, the usual method is to add boiling water until the desired temperature is reached.
