    Is it ok to add So2 mid-Perry fermentation?

    Having upscaled to 800L this year, after some reading I’m nervous that I didn’t add any SO2 at the start of fermentation (I’m using natural yeasts only). Am I OK to add it mid-fermentation, or am I best to wait until after it’s first rack? Grateful for any advice!
