Today was a brew day, and the first of 2015.

I decided I would brew a Foreign Extra Stout.

AG#55

Name: Valhalla


Grain Bill:

4400g Maris Otter 63%
700g Brown Sugar 10%
700g Carapils 10%
580g Chocolate Malt 8%
300g Molasses 5%
270g Crystal 60L Malt 4%

Hops:
25g Magnum 17.3% at First Wort
26g Pacifica 5.6% at 10 min
30g Sterling 7.9% at 10 min
20g Sterling 7.9% at Flameout
Irish Moss 15min


Mash at 68°C for 60 minutes
60 minute boil
Pinch of Gypsum at beginning

Yeast:
Kolsch Yeast WY2565
Ferment at 18°C
Brewed to 23 litres
IBU:58

SG: 1066
FG: 1013

Interesting yeast choice for a Stout. What's your thinking for using a kolsch yeast for a stout?

My thinking was that it's coming close to the use but date.

I know a friend uses the other Kolsch strain yeast in a lot of his brews.
Will see how this turns out
