Brewing with Wheat Malt

I tried a beer from Purity Brewing Co the other day and the label suggested the following

Purity Brewing co (Warwickshire) - Mad Goose Pale Ale 5.0%

Marris Otter, Caragold, Wheat Malt
Hallertau for bittering
Cascade & Willamette aroma

I thought it tasted quite bitter 35 - 40 IBU

2 questions - Caragold? - Has anyone ever used this? & Wheat Malt - what sort of percentage should I be thinking of in a pale ale like this?

Caragold is one of the 'new' caramel/crystal malts and is quite pale ( I can dig the specs out from somewhere) used for head retention etc in the 'blonde' style ales . . . Up to 5% IIRC possibly more

Wheat malt . . . . Converts itself so up to 100% . . . except that you can't sparge it that well . . . . and it makes a really boring beer . . . . trust me its not worth trying . . . for head retention purposes . . . again 5-10%
