Hi, i have started a fruit juice wow version from the following,

1 x Aldi 1 ltr wgj 100% (not made from concentrate)
1 x Aldi 1 ltr pineapple and passion fruit 100% (not made from concentrate)
800 grms sugar
1 tsp pectolase
1 tsp of nutrient
1/2 mug black tea
1 tsp glycerine
yeast

question is would i need citric acid and if so could this be added when racking.

I wouldn't, pineapples are super acidic so it'll probably be supplied via that.

on racking, take a sample and pass it around your gums. if you get a sharp tang, it's got plenty. if there isn't one at all, add a little citric acid. it can be added at basically any point as long as it's mixed well :thumb:
 
I'm guessing you don't have a ph meter or litmus paper. I doubt you would need to add any acid, but the only way to tell will be to test it. You would ideally be aiming for 3.2-3.5. When using pineapple and passion fruit I get a reading around 3.3 after adding 2 tsp in 25 lt. So I would guess you would be around the 3.5 area without adding any acid, which is not too bad.
 
I add a teaspoon of citric acid to all my wow variants, we like the "sharp tang" Rob refers to.
