Hi All, I have some St Peters Golden Ale on the go atm, been in the fv for 9days, and the airlock is bubbling at an average of 1time per minute. Do I need to bottle now or shall I wait the full 14days. I snt want to do it too early and it's not ready or too late and it's sour, any advice much appreciated. Thanks
 
The safest thing is to leave it the 14 days.

If you bottle too early and it is still in the tail end of fermentation, then you can end up with cloudier beer/more sediment in the bottle, as it has more yeast in suspension when you bottle it. And if it still has sugar to ferment then it might be over carbonated when you open it.

Leaving it the full 14 days won't make it go sour. The only downside of leaving it the full 14 days is that it just takes longer.
