Something special. A gift from a forum buddy. A 10.9% Sauternes Barrel Aged Quad from the Netherlands.

This baby has pils, caramel, and special b malts, bittering hops are cascade and apollo, late hops are saaz. To spice it up a little, candy syrup - and remember aged in sauternes barrels.

The colour is a dark red-brown, carbonation is fairly soft. The beer is pretty clear because I left the sediment behind but having drunk the swirled sediment I don’t think it would have made much difference.

The aroma is really complex. You can smell the Sauternes, you can smell the barrel, you can almost smell the cellar it was kept in (ok that’s more artistic impression). Berries, stone fruit, cherry maybe too. There’s a slightly sweet aroma like a fortified wine.

The flavour is waaay too complex for me to describe. It’s like the aroma but amplified and there’s a noticeable alcohol flavour but it’s so smooth and really doesn’t show until quite a way into the finish. Speaking of finish this beer has a finish that lasts and lasts. The beer is full bodied and leaves a little tackiness on the lips.

I believe this beer is no longer produced so is already in short supply and won’t be available for long. That’s a real shame because this is a pretty special beer in my view, it makes me happy with every sip.

I might see if I can buy up the last few bottles...
 
Was going to have a drink tonight as I have been struggling with a cold, but after a session in the pain cave I fancied some cheese and biscuits for supper. You need a drink with those and wanted something dark.

I then remembered that I have a Baltic porter from @pilgrimhudd. I have never had this style but fancy brewing one in winter. I do have a verdant version in the fridge.

This poured with a nice thick white head that dispersed after a while. This is different to a normal porter, seems lighter and definetly more lager like that the traditional porter. But like a bipa without the hops. I really like it and very interesting beer. This seems more carbed than I thought but that could be how it is supposed to be.

This is a cracking beer @pilgrimhudd thanks for sharing. I wouldn't mind seeing the recipe and how it was brewed.

So the recipe is GH's Baltic Porter with a few tweaks, unfortunately I can't find GH's book or the the exact tweaks I made.... What I do know is that I swapped out the Carafa and added more caramunich and choc malt. I used MJ Bavarian 76 yeast, my OG was 1068 and FG 1018 making it 6.5% which was a lot less than it should have been, I was getting really poor efficiency with my bigger beers then.

That sounds amazing, I really enjoy their stuff. I think I love them as much as I do de struise and westvleteren.

Tried my first (and then second) bottle of Greg Hughes Witbier. This has been conditioning almost 3 weeks, but tastes ready to start serving.

I think its quite a forgiving style, @matt76 brewed a very nice one, he got his recipe elsewhere I believe.

That ipa is probably oxidised unfortunately, some have been ok but others terrible.

First up I have never had the original so I can't really compare but I have did some research as I plan to brew one myself.

Pours a lovely golden orange with perfect carbonation. Great white head which lasts
Aroma is very subtle for a Belgian beer. Light fruit very clean
Taste is nice, high bitterness as per style. Herbal with a light fruit.

Another lovely beer Dave 🍻🍻

Cheers, I'm enjoying it. I would like it to have slightly higher bitterness, some more citrus flavour and a little paler for Mk2
 
A Shindigger Mango Unchained tonight. It's nice, but a bit boring. I thought it would be super fruity with the pineapple and mango in it.

Well I was going to do some gardening today, but the weather had other ideas. So I'm brewing an English IPA and drinking this Empress Tonkoko Imperial Milk Stout from Brewyork.

It's a bloody good one! Coconut and vanilla aromas with some banana bread as it warms. Super thick mouthfeel with more coconut and vanilla and a sweet fruity chocolate finish with a nice lingering bitterness.
 
Where are you buying that, Mr H? Not in your local supermarket, I'm guessing. Local beer shop? Mail order?
