9 tins of peaches in light syrup (411g tins)


1kg of sultanas or Raisins.


1.3kg of sugar.


1tsp of Ritchies wine yeast.


Water.





Method: wash the sultanas with some hot water then put them in a pan and cover with cold water then bring to a boil then simmer for 30 min then use a potato masher on the sultanas then add to the fermenting bin then make some sugar syrup with the 1.3kg of sugar when it as cooled add to the fermenting bin and empty the tins of peaches with 2 pints of water into large bowl and use a stick blender to make peach pulp then add to the fermenting bin then stir then add the wine yeast then cover. Note stir the must two times a day for 10 days then strain and press the fruit pulp using a fine strain muslin bag then divide into two demijohns top the DJs to the neck with cold tap water fit the airlocks then leave to finish fermenting.


Then fermenting as stopped rack add kwik clear then after about a week rack again then leave to mature for 6 to 12 months

How did your Peach 2 gallons work out using 9 tins. I've got 9 tins but thinking of using 7, what do you think?
I was also going to add 250ml grape concentrate instead of Raisins.?

I needed to back sweeten it was a bit dry ,but other than that it was very nice.

Had a busy day yesterday, racked off 2 wines, started 2 TC's and got the Cherry one underway. Only used 7 tins as your recipe used 1 can per litre and added grape concentrate. Looks and smells great... Time will tell lol. Starting SG was 1.090. Being a Red/ Dark Ros'e i like it a bit dry but as you said i can back sweeten if needed.

Peach and apricot works quite well too if you can’t get enough peach tins.

Also try tinned pineapple, that’s ace.
Both sound good. Got enough tins of Apricots for 1 gallon on there own but will also try a 50/50 split with Peaches. How many tins of Pineapple did you use for 1 gallon. 1 tin per Ltr ?

I think I used 10 of the larger tins of pineapple (about 420g odd) when I made 3 gallons a while ago, and 375g sultanas.

Nice one thanks. Only going to do one gallon so will probably go for 4 cans and 250ml white grape concentrate instead of Sultanas. Think that should work what do you think ?
See your planning an Elderflower Wine, be careful on sugar and flowers. Made one 2 years ago from a utube recipe and came out to sweet and the flavour of the flowers was to strong, wil be doing it again but will reduce on both. Have got notes if needed. 🤔

grape concentrate sounds great. I only use sultanas cos they are cheaper and easier to get hold of.

I make most of my wines to 1250g sugar per gallon, taking into account sugar from fruit and sultanas of course. Possibly slightly less for elderflower as it is supposed to be a bit more delicate.

I plan to use 20g of dried elderflowers per gallon, as I used 25g last time and found it quite flowery.

Just checked how i made it and no wonder it was to sweet and floral.
You said you used 25g last time (dried) i used 1 pint of fresh flowers lightly pressed so wil deffo reduce that amount.
Sugar used 1.5kg plus i used a White Grape Concentrate, don't think i took that into account lol
SG was 1.126 so way to much.. lesson learned. 🤔Final gravity 1.030 at 12.58%
It's drinkable but as said before to sweet and floral. 😝
Might try drying some flowers as have a massive tree in the garden.
My excuse is it was my first country wine😁

Ack sweet wine is drain cleaner for me lol, can't stand it.

Chilli Wizards sell dried elderflower at a good price.

Probably make elderflower later in the year when the stocks run drier lol.

Gave a bottle to a friend who bashed it down with sparkling water and said it made a great summer drink, so not all is lost lol 🥂😎
 
I see Lidl have canned peaches in grape juice (approx 450g drained) - perhaps that grape juice instead of grape concentrate which is very expensive for 500ml. Been thinking of trying canned fruit again after yonks.
 
Just done a Black Cherry wine from tinned Cherries, came out very nice. Did a peach one just over a year ago and again came out good. Got Apricot, Mango and Pineapple ones in the pipeline all from tinned fruit. Well worth a go.😎🍷🥂
 
I got 3 gallons of Blackcurrant on the go at the moment using 12 tins of blackcurrants in syrup.

High hopes for this one lol.

Sounds good. Love Blackcurrant Wine , update us please when all done how it turns out.
I'm lucky here as one of my neighbour's has a couple of massive Blackcurrant bushes so i get about 8 to 9 pounds of fruit from them which i make Wine with. Plus I've taken cuttings and got 5 bushes coming on nicely.😎🍷
