Yeast Recommendations for Leffe clone

Im trying out the belgian blonde ale recip from the Hughes book and using MJ M47. No idea how its going to turn out. Im hoping for a Leffe style. It was interesting making the amber candy sugar.

Might try the recip on this thread from @Baz Chaz another time!

More bananas with this one, less cloves.

For cloves, use MJ M20 (Bavarian Wheat), after a week of fermentation, rack your beer to a another vessel and leave it for a month so that the yeast can flocculate. At bottling time, use a bottling yeast and rack very carefully to the bottling bucket. You should get a clear beer, (almost) without the weizen yeast.

Ive got an M21 the hb shop owner recommended. i was gonna return it. lol
 
I made a blonde last weekend and use Wyeast 1214 Abbey Ale. Made a yeast starter but should have done research first as it’s a very slow starter so my yeast starter was probably all but useless and as a result probably only pitched half the amount of yeast I would have liked. OG was 1071 so fingers crossed I can avoid off flavours with stress. One to watch for the future with this yeast. First Belgian Blonde I’ll have made.
 
22 litres of Leffe blonde
4500g Pilsner malt
400g Munich light
500g Flaked maize
200g Melanoidin malt
450g golden syrup
25g EKG @60m
30g Saaz @15m
CML Flushed Nun yeast
 
@Cheshire Cat How does the CML Monk compare to the CML Nun for the Leffe clone?

Edit: To put it another way.... I have Monk in stock and if that was better I will use that. Failing that, I am putting an order together with GEB - and I could get a T-58 if Monk was not favourite.

I’ve used them both but never had them together so both were good so go for it.

Ive ordered M21 to try and be more Belgian for my next one.
