Aye, you’re doing good work there 👏

Keep it up and learn any important lessons for next time (to do the same?).

Perhaps not do the same!
Rather nerve wracking.
So it was racked into the cubitainer 1st April at SG1010. Today looks like SG1007.
It would appear to have had a 'yeast revival' some 4 weeks later after being dormant in N corner of garage the whole time.
I think it's because it's proper Pilsner yeast. MJ M84.
Fortunately the batch#2 was bottled at SG1009 and I only used 100g sugar for 21 litres, so the bottles should not (hopefully) become Pilsner bombs. It could well be lively on opening though.
I will keep the community posted, be assured.
Leason learned: Take more heed of the hydrometer sleeve which reads, "DO NOT BOTTLE (OR KEG) BEER UNTIL HYDROMETER SINKS BELOW 1006 OR BOTTLES WILL BURST."

This is the 7% IPA. It’s not as dark as it looks in this subdued lighting, it’s more amber. The bottle is in Greek but I can make out the hops; Mosaic, Citra, Simcoe.

I was amazed when I tried it on a big bag of Japanese Oolong tea I had been given, written only in their character script .
Immediate understandable instructions appeared.
