What's the head retention like on that! I remember last year a wheat I brewed was carbonated fine,tasted fine but had zero head retention which spoiled it a bit for me as i do like a nice fluffy head on a wheat!
Someone did post a great answer as to what causes this but I can't remember!

Its still fermenting will feed back when ready in about a month.
 
19 lts Kegged and bottled (3x500ml) of my "Kwak" clone , it came in a bit light at 7.7% abv as I overshot on the volume but to get a bit extra I'll take the hit lol. I have harvested the yeast to use in my Hercule stout (9%abv) which I'll brew once I've got Four Priests "Murgy straight" brewed on Sunday!

Hi Clint. I made the Route Citra 6 AG kit from BrewUK. The head retention is pretty good but I do like a wedge of orange chucked in too.
This tends to kill it off a bit!
 
I've just used a kviek yeast for the first time (the Lutra strain from Omega) in a pseudo lager. It's a Vienna lager and I fermented at the lower end of the yeast's temperature range which apparently gives the cleanest flavour profile, ideal for a lager. Clarity isn't something that normally bothers me, but with this being a lager, and wanting to share with non- brewers, I did want a really clear beer this time. So I hit it with every tool in my limited armoury, kettle finings, then leaf gelatin and finally cold crash for about eight days. The trub was really compacted, so fingers crossed. Will post a picture here once it's conditioned - should be good to go this weekend.

20l of kombucha. Figured I would put some down time while brewing to brew something else. I also pulled out the old scobies and washed the container out.

Yesterday I brewed a variation on my recent Steam Pilsener, this time swapping MJ54 for a true lager yeast - Lalbrew Diamond.

Batch#31
Diamond Pilsener 18L
Total water 23.6L ( BIAB no sparge )
OG 1.051
FG 1.010
EBC 8.7
IBU 35

3.5 kg Weyermann Extra Pale Pilsener
800gm Crisp Vienna
20gm Simpsons Dark Crystal

15gm Hallertau Mittelfruh 60mins
85gm Hallertau Mittelfruh 10mins

Was a late start and late finish, digital thermometer also packed up so ended up pitching 2 packs dry at around 18c.
Now slow but steady fermentation in brewfridge at 13c.

Will be interested to see the comparison with different yeasts, this is first true all grain lager I've done.

Something different...a Vienna lager.
Some light research and stock check and I've cobbled up a recipe...
Pilsner malt,Vienna,light Munich,carapils and last few gms of my Briess Black Prinz to drop the colour a bit ..not that it matters much! Hops are magnum and HMF. Yeast M54.
Mashing in soon...

I done..
Pilsner 4kg
Munich and Vienna 250g each
Carapils 500g
Black malt for colour adjust.
Magnum and HMF.
perhaps I should have dropped the pilsner a bit and upped the Munich and Vienna. Missed the colour as only had light Munich and 30g of black malt left.
Sample tasted nice,just waiting for the brew fridge to get it to pitching temp.
 
Just kegged my first pilsner.
Weyerman floor malted pilsner, some carapils, and saaz.
Dead happy with how it’s come out.
I’ve found it really interesting how the flavour changes (mellows) over the last couple of weeks.

So US-05 works in a pseudo-lager, at normal temperatures? I might be tempted to give that a go!

Though my couple of previous attempts at pseudo-lagers have been pretty dismal...

OK, I have the kit, I'm going in! :D
