Hi all,
Would of put this brewday on my thread but decide not! Lol
Been for months with GerryJo with this clone..
He has made his..and I'm going to ettemp my spin on this brew!
Thinking go large or go home so to speak!!
But cheese of with small batches! Even though I don't drink much..my stocks are always down lol (prob giving the ale away more like)
So here are for now!!!
Shipyard Rye Ale 23l
4.75kg marris Otter
1.20kg rye malt
0.10kg choc Malt
19g summit @ 60 mins
Whilfloc @ 15 mins
18g cascade @ 10 mins
12g amirillo @ 10
10g mosaic @ 10
10g summit @ 10
8g citra @ 10
8g amirollo @ 0
8 cascade @ 0
8g citra @ 0
Belgian ale yeast (starter)

Time yet to adjust it..
Be the morra tbh!!
Off for my grains and for the starter on!!

I like your thinking Bri and could maybe swap out the hops for something different once we get this sorted.

Just noticed your using Maris Otter which will be nicr.I used GEB pale ale malt in my first though shall be using Minch Pale ale malt for version 2.
 
Yeahh my thinking..with both mine n your versions we might get it spot on!!
Just time and making adjustments!!
Think this #1 should of been a small batch lol..til I get the version(s) spot on..
A expensive brew 23l at a time to get it slightly wrong!! But what's the worse that'll go wrong!! Hahaha!!

What's the thinking behind the belgian yeast? I'd have assumed that something cleaner would fit better?

but tbh I don't know!:doh:
it will be in my pm's from Gerry.....
reckon he'll give us the answer...and prob remind me:thumb:
into the mash now....the colour a bit dark...:whistle:

The idea of the Belgian yeast was to help compliment the Rye giving that slight extra spicy,peppery note but too also mellow it with the fruity notes this yeast strains has along with the fruity notes of the hops.
I've used the Belgian before and have had vanilla, blackcurrant,orange and even banana taste feedback from a few individuals plus it's an experiment at the moment to see how it turns out.
My first attempt was with MJ36 liberty bell and it's nice and clean though slightly dark due too excessive chocolate malt but I think the Rye just needs lifting a bit without adding any more.

More learning with a bigger hops bill, and my volumes.
I wort chilled after months..so my calculations kept me on my toes!
Final volume 22.5l in the FV..lol
Sg reading 1.060
Est final 1.015
Also the sparge went great! I think the extra time upped my readings..
Was estimated at 1.057.
I was bothered on the colour but looking at a really light brown!!
Phewww! Thought the choc would smash it all in..
May next time less choc..

Now put the extra hops away for your next attempt cause they do smell heavenly and sorely tempting [emoji106][emoji39]

Well!! What a panic!
Few days away! Get back....mmmmm! Surely the fermintation is ended!!
And all you know you can get things like stuck fermintation in you knappa! I did...
Wouldn't say I was frantic about it!
But 22l and one of most important brews for years taking months of organising etc (with help from @Gerryjo ) could of turned into a ball ache!
Heart was beating..looks at the brew..no sign of contam..no off tastes.
Closed the FV.
The sample colour is better than I expected with using choc Malt!
Smooth and the hops was just right!
The reading was down to 1.012 (estimated final 1.015)
So far I'm checking ova the next few days!
Looking at a whopping 6.30% ABV
NOT WHAT I WANTED LOL!
But version 2 will put that right!!
Dry hops!!! Hmmmm! I'll see.
If it's ok why bother!!

Panic ova...calmed down..
Time for a quiet bit of fishing by the lake!!
N a few samples of my Berliner Wiess tonite...ok it's going to get better in the months to come...!!

update.
tranfereed the brew into a corni...(for more room in the fridges) and 12 bottled carb'n up.
the rest will be bottled soon as I get more bottles.
didn't dry hop...lush taste.
final 1.010.
a quick tidy man cave....n an evening catching up on the pc.

Well is it what you expected or anything close to the original out of curiosity...?
 
With all my good ettemps to syphon n filter the 12 bottles so far have some have a large amount of sediment!!!
Now this is when my tiny brain doesn’t work!! If I’d cold crash befor might of helped..but I think I didnt leave the secondary FV to settle!!
I know there be some sediment but when it’s fully carb up the yeast will add to sediment!!
All not lost!!!
The rest of the ale is cold crashing so I’m going to make sure slowly does it!! Doing it right!

I could sub the Vienna n you can sub the Munich! Or other way round!
Still reduce the choc! For version #2
