In 2012 we planted a bunch of fruit trees in the field below our house, including 10 different cider apple varieties:
Tremletts Bitter, Yarlington Mill, Lady’s Fingers, Kingston Black, Bulmers Norman, Browns, Court Royal , Tom Putt, Fair Maid of Devon, and Killerton Sharp.

So last year we had our first crop of apples - not a lot and after leaving them in some buckets for a couple of weeks put them in the freezer meaning to thaw them out and juice them after a couple of weeks. Needless to say I never got round to it until a couple of days ago...

We got 3 gallons of juice which was surprisingly non-acidic. OG about 1070 but I added a bit of water to it to reduce that somewhat. Then added 4 campden tablets to `sterilise' it.

Today I added the yeast - Mangrove Jacks M02 cider yeast.
 
Fantastic stuff. Must be a lot of work but the end product will be well worth it I’m sure.
