OK, looking at rebrewing something similar to this for our Norwich summer Amateur Brewers Festival. I hope my skills have moved on, and certainly water treatment may make a difference. Recipe attached.

My HPA volcanoe has settled down now so will leave it for another week or so and then it may be my first kegged ale.

Will report back...

@MatinHaworth Technically the reverse as it was the first brew that I ran through my water filter.

Probably pointless in Wales as it comes out of the sky quicker than we can drink itasad1

Looks like a lovely recipe.

That's a lot of crs isn't it? How hard is your water!?

Not as hard as the water where I live then. I was thinking that I've never used that much CRS, but forgot I only treat mash liquor (to keep CRS usage down mostly) and sparge with Tesco Ashbeck asad1

OK, tweaked the recipe and brewed today.

Water treatment was according to this forum's calculator:
- 30ml CRS (1ml CRS/Litre liquor);
- 0.2 gypsum in mash;
- 0.4 gypsum boil, 5g Epsom salts boil

Given the total alkalinity of my tap water at 218, this should give a sulphate-forward water for a good hop profile.

As you can see, I used 20g Celeia at 10 minutes, and an additional 20g of Celeia as a hop stand (80C for 30 minutes). This change to the hop schedule was influenced by James Morton's English IPAs.

The brew day went just fine, with the only unplanned issue being the equipment temperature loss at strike being higher than usual (it's winter, idiot!).

I measured mash pH for the first time, and got 5.4 - which I'm happy with.

I got 20l at 1044. I could have pulled through 23Lt from the boiler, but wanted to keep the wort really clean and as bright as possible. Photos on next post.

Really happy with the clarity of the wort. 20190126_151331.jpg

I am about to cold crash the HPA but I am aware that I was short of the Target hops during the boil as I had a short delivery and only noticed after I had started. I think I will do a hop tea during the cold crash.

Should I use more hops than we’re missing from the boil or the same?

Thanks

How short were you? You're missing bittering hops rather than aroma so a bit late to change at this stage - I'd just leave it.

Wye Valley is my local brewery and I've had a go at HPA and Butty. Looking at my HPA recipe, it's almost identical to yours so great minds think alike, although I went for more bitterness 36 IBU. Not a lot of info from the brewery although I have done a brewery tour and made note of the Target and Celiea hops.

Let us know how yours turns out, here is mine last time I brewed it

Kegged mine last weekend Martin, sample tasted good, hoppier than I thought, and very clear. Will probably give it a taste test this weekend.

Nice one! I bottled mined last Thursday....what yeast did you use. I think that I may need a more 'english' character yeast than the us05 I chose, and maybe a dry hop.... What yeast did you use?

Thanks Martin

I had a pack of Crossmyloof Real Ale Yeast kicking around so I used that.

Will give you an update when a crack a pint off. Interested to see effect of too few hops compared to your recipe.

Got some useful feedback from the fellas at Norwich Amateur Brewers on Monday night, and plan to rebrew this tomorrow, upping the IBUs to 33, changing the yeast to give more esters (Wyeast 1469) and adding a dry hop! Apart from that it was fine (if a little green still!). Recipe attached. Cheers Martin

I think it’s time to give HPA another go. Sadly, I took no notes on my first brew but it vanished fairly quickly so I am hoping that my slightly better skills and some water treatment add to the success of the brew.
