It might be fine but there's a risk of a stalled fermentation. If it was me (and a few years back it was) I'd buy a pack of Nottingham or S-04 and use that instead.

I bottled mine on Friday into 500ml bottles priming with 4g spray dried malt. I don’t know if it will make any difference to the finished beer but I won’t do that again (see my other post on this). I’ve also filled a few 200ml tonic water bottles so I can test along the way without wasting the best part of a pint. One thing I’ve noticed after just two days is that the beer has cleared very quickly. It’s a great red colour with a fine layer of sediment at the bottom already. I usually ignore the kit instructions and go for the 2-2-2 but notice the instruction for the St Peters kits do say to leave warm for just two days after bottling then move somewhere cool. What do you think? Should I still stick with the 2-2-2 on this or perhaps move to the cool earlier? Just to add, I did use 11g pack of Wilko Gervin yeast for this instead of the 6g kit yeast in case that makes any difference.

Hi Markk

I have brewed this kit twice. Both times I brewed short to only 21 liters and used the supplied yeast with no issues, on second time I dry hopped with Goldings. Both times I used 90g Priming Sugar.

I have always used the 2-2-2 method. Can't help thinking that 2 days warm conditioning might be a little too short to develop the required carbonation.

I was very happy with the results on both occasions. Hope yours works out and you enjoy the results.

Ok, thanks for that. Mine was brewed a little short to about 21 or so litres. Not intentionally, it appears the flooring in my shed is on a slant! I think I’ll stick to the 2-2-2 too. Looking forward to early June :)
