I picked up a 12l brewferm IPA extract kit and I'm looking at adding mango to it.

Now, for the initial fermentation, I'm quite tempted to use mango flavoured still water from asda, as it's 37p per litre, instead of using general tap water. Has anyone tried this before? How successful was it?

Once I'm ready for 2nd fermentation, I will split the batch into 2 smaller batches, 1 with just the mango flavoured water and 1 with the mango flavoured water but also adding mango puree.

I will probably use amarillo hops with this and am considering lactose too in order to make it more of a milkshake IPA.

Any thoughts, feedback or suggestions are welcomed.

ASDA No Added Sugar Mango & Passion Fruit Flavoured Still Water Bottle

Ingredients
Water , Citric Acid , Flavourings , Preservatives (Potassium Sorbate, Dimethyl Dicarbonate) , Sweetener (Sucralose) .

Potassium Sorbate = Yeast killer, so no I wouldn't use this stuff to make a beer. Don't like the idea of adding artificial sweeteners to beer either.

Thanks for that. The only other option I can think of doing is infusing some water at home with mangos myself. I pretty keen to try and have this beer come out as juicy as possible.

Read up about how other homebrewers add fruit to their beers. I have never tried it myself but some appear to use frozen fruit and siphon the wort onto this. Others boil the fruit first or use puree like you suggest. I think one of the problems with puree is with additives, so you need to check what's in the tin.

I also wish to up the ABV on this beer quite significantly. The kit suggests a final ABV of 6.5%, but I would ideally I would like a solid 8-9%. Any ideas on the best way of doing this?

Mash at 68 deg c for stronger abv will help. I suppose when you puree the mango you could add some sugar and use a stronger yeast? Others here understand this better than I but I think that is what I would try

use frozen mango chunks from the supermarket. I wouldn't puree it as it is not easy to syphon off unless you bag it. I have done the fatal mistake of putting part cooked rhubarb in without a bag and it was a nightmare to syphon plus it absorbed about 3 litres

I used Mango Essence, it came in 10ml bottles from Ebay around £2.00, its basically for cooking and drink making. you add two or three drops per 500ml which I did at bottling it worked and tasted really good but when I use it again I will add it as I serve the beer, so I don't have to keep the beer with and without separate.

It's a kit unfortunately, so no mashing for me.

I've used puree before, in a bag and most of it dissolved. The rest just sank with the sediment at the bottom so had no issues.
