My "kolsch" is very basic ...
4kg pilsner
1kg Munich
35g hallertaur hersbrucker @ 60
30g @ 10
CML kolsch yeast
22.4 IBU
Next time I'm dropping the Munich.
 
Hi Clint mines more basic than that, haven't brewed it yet,
pilsner 4.07
flaked wheat 0.472
hellertua aroma 3 additions 29 ibu's
5.01% abv srm 3.4
bu;gu ratio 0.57
balance value 1.24
the last bit is beyond me at the moment

Imo basic is good for a kolsch. Although have you tried a little Vienna malt in place of the Munich? Works very well, just a small amount is needed though, 4 or 5%.

I would also recommend trying Wyeast 2565. The CML kolsch is decent, but I much preferred the Wyeast.
 
Tonight my first taste of Spencer Trappist Ale. It's pretty good, a fairly straightforward Belgian blonde type beer but very drinkable. I can't find any definite info on what yeast strain they use, but it tastes very much like Wy3787 to me.

Chris assuming this was aimed at me, my first attempt which came out pretty decent was ( cut n paste from original thread)

Recipe for 20l in fv was 3kg MO, 250g caramalt with cascade (30g @60; 30g @10; 40g at switch off). Used a combo of S05 and Gervin as I am sure I read somewhere that they use a mix of yeasts being the above 2 plus S04.

Then used Amarillo as a dry hop
 
Having @dan125 kviek pale ale. Lovely beer. Nice aroma with smells of mango and a spice after taste .great head which lasted the full beer. Reminds me of a rustbucket rye pale ale. Would love to know what's all in it. Really nice beer. Well doneclapa

Thanks mate. Glad you liked it. No rye it in but I know what you mean about a touch of spiciness. Recipe was a bit of a user-uper for some cara/crystal. For a 30L batch it was:-

Working from home today. So I have one of my Peanut Butter Chocolate Coffee Porter's to see me through the lunch hour.

Whoah... sounds and looks nice! any pointers to a recipe that you followed?
My own Frankenstein from a Young's American Mocha Porter Kit. As well as the this kit, I added the following: 1.5kg of Brewing Sugar, 500g of Lactose, 1kg of Extra Dark Spray Malt, 2 x Vanilla Pods, 65g of Chocolate Mocha Beans and 1kg of Peanut Powder. Brewed it short at around 18L I believe and it came out at a relaxed 7.8%. If I could of changed anything, I would of siphoned it a couple more times to reduce sediment from the left over peanut butter. If you want any more info regarding it mate, just drop me a DM.

Sorry, it was aimed at you! Thanks very much. I’ll give that a go. The head brewer said he used 3 strains but it was essentially a split between US05 and Nottingham
