What I'm mostly unsure of is the hop bill, as in time and amounts. It should be a 80+ IBU ale though, just not sure where to put what hops.

I wouldn't put the sugar in and use a bittering hop and save the large dose of simcoe as a later addition apart from that should be ok but it would be too bitter for me personally at 80IBU's but thats down to individual taste
 
You won't be getting too many of those down ya!

I already did something like this (but milder) with Chinook: a SMaSH with Maris Otter. One per evening was indeed enough!

I cut down the sugar to 600 grams (I might even skip it if my efficiency turns out better than expected), and swapped the early 70 gram Simcoe with the Simcoe dryhop. Still a bit above 80 IBUs, still around 10%-ish.

Let's see how a kveik handles that :)

Update:

Changed the 6 kg. Pale Ale for 2.8 Ale and 3.2 Vienna. Should make it a bit 'maltier'.
And an opportunity to process some bbd malts! :laugh8:

All malts are cracked, tomorrow brewday!

Love a bit of Vienna. Brewed an all Vienna IPA some time ago and it came out great. Looks a nice recipe.
 
Don't know Voss Kveik (Omega #OYL-062) but I'd usually expect a lower FG than 1020, at that mash temp, especially with all that sugar.
Looks like a cracking brew.
 
Update: grainbag tore during transfer about 2 hours ago. Took 2 hours to clean up the worst. Grist is one massive cake now. Finishing cleanup now.

I guess I'll fire up the xbox .
