It is time for a further beer style to get my "full guide" treatment.

The style in focus in this video is Kölsch.

Within this video I explore the beers history, how to write recipes to this style, how the BJCP views this style for compeition, my tried and tested recipe, tasting notes, my most recent brews footage, examples of previous brews results visually and lots of hints and tips along the way.

Much goes into these types of videos in terms of effort and time and I hope you all find value in this final result.

As soon as the heatwave goes I am doing this. Looks like another solid recipe and I have all the ingredients. Very interesting what you say about lagering at 5c giving a better flavour. Always in a hurry so always done them close to freezing but I am definitely gping to try this. Sitting here drinking a glass of your porter and it's very nice too.

Great. Yes this one works very well, very easy drinking but with some extras to keep the drinker interested for more reallly. I think some Kolsch can be quite bland. Great that you are enjoying the Porter, I love that stuff :)
 
Great video Dave! I'm currently drinking a kolsch...pilsner a bit of Munich and hallertau...inspired to brew another. I like your yeast addition technique!

Nice video dave. I'd be interested in your take on an English Bitter, especially how you'd go about getting some kviek in there
Thanks :) I will be doing one of these full guides for the English bitter for sure. Its often an overlooked style these days sadly.
 
I actually watched this on Sunday, as I had made a Kolsch at the start of July and wanted to make sure I hadn't messed up. Overall, I think I was close to the style (90% pilsner, 5% Vienna, 5% wheat, magnum at the start of the boil and saaz at the end, then CML Kolsch yeast).

I like how you went into the history of the beer style, which is something that I think is lacking in other YT channels I subscribe to.

Thanks Harry, great to hear. I am yet to find another channel that actually teaches recipe writing also, seems a pity.

A good point - most other channels seem to make recipies already available on DIY dog etc. Not that there's anything wrong with that, but recipe writing is another skill that needs to be learned after you've got your processes correct :cool:

Sadly it is a dying skill even in commercial breweries. I think it is important to keep it alive.
 
Good video. I've used k-97 twice and both times it's stalled on me which has led to further problems. As I left the beer for a while with no movement in SG, I bottled, but that must have roused the yeast and I got a load of bottle bombs and gushers.

I made friends with a brewery owner when I lived in Ireland, his brewery's flagship beer was kolsch. He was using a liquid yeast (didn't say which one) but said they decided to move to US05 as it was much easier to deal with, no noticeable change in the beer.
