Hi guys,

I'm new in home brewing. This is my second batch. I have used only kit included ingredients. Started on 6th of November, today is already 17days in fv and an airlock is still bubbling once per 1-2 minutes. Temperature is 22C. Instructions on a box says that first fermentation stage should be finished after 7-8 days... Also instructions says the gravity should be below 1014. My current gravity is 1014 and it's constant for last 3 days. When I take a sample of beer to check the gravity, I still can see that it is quite fizzy. Taste and smell are alright. Any recommendations what should I do and when it would be safe to bottle the ale?

The instructions can be a bit misleading...you are right to take consecutive gravity readings,that's the only sure way to see if it's done. As it says you need to be under 1014...I'd leave it another couple of days,some beers can take a while to hit fg.. three weeks isn't unusual.

Ok, mate I will.leave it for a week more. Thanks for the answer.
 
The Young's IPA is just the same...3 to 4 weeks to hit the fg with the last couple of points taking over a week!

Thanks mate. I just was a bit worried, I have read few forum threads, where people had explosions because a first stage wasn't properly finished. 3-4 weeks for brewing... I think it's time to buy second fv :)
 
I have one for when the brew fridge is occupied and I'm double brewing. If using in your shed I'd advise wrapping the fv in some sort of insulation to avoid big temp swings or build a box around it.

Morning Clint,

I have left it for one more week. So today 4 weeks in total. I have checked the readings and it's now 1010. Nice smell, nice taste and quite clear. But the airlock still bubbling, maybe once per 10 -15 minutes. Any suggestions?

Your beer is ready to package in my view. Be aware that it may take a longer to carb up if it has now cleared, but there should still be enough yeast present for carbing to happen. If you are going to put your beer in bottles bulk priming may be better than individual bottle priming since it will even out the yeast load, otherwise some bottles may get hardly any yeast depending how you fill. However I would not be tempted to stir the trub to get over this potential problem, although you could seed each bottle with a tiny amount of trub to at least ensure each bottle has yeast in it. And perhaps put some beer in a PET bottle so you can monitor how carbing is proceeding?
 
There may be absorbed co2 in the beer still escaping and gathering in the fv headspace before enough pressure is created to force it through the airlock. I have forced any pressure like this by pressing down gently on the lid...
Personally I'd bottle it.
 
How did it work out - I am having a similar experience with a Woodfordes Bure Gold kit? I'm 13 days in and not sure how long to wait, but the airlock is still going at once per 60s. It's been at 1012 for the last couple of days. I'd like to bottle/mini-keg.

It was in a fermenter 1 month, started at 06.11.19 and bottled it at 06.12.19 with gravity 1010. I didn't want to wait longer. But I think that there still were a bit of sugar, because I have added usual amount of sugar in each bottle for carbonation and it became overcarbotated. It's still alright for drinking, but a bit highly sparkling drink, not like ale should be
