Hello Forum

Last week I bottled some cider which i had let fermented fully so it was really dry and tart. My plan was to add sweetener as I had done so successfully last year. But this time round I got myself really muddled and added way too much sweetener! Something like 50x too much! I have some other dry, tart cider I could blend with it to re-balance the sweetness. But I think my ratios are still way off and it would still be unbearably sweet. Is there anything else I could do to try and balance things out. Don't want to add water as that will bring the abv and flavour down too much. Could I add malic acid? Or is it a lost batch...

Thanks

What did you sweeten it with?
If you used sugar or something fementabe, then you can just let it ferment out. If you used an artificial sweetener, then use some of it to blend with your tart cider until you're satisfied with the balance. The rest, I think will remain undrinkable, but you could bottle it up and keep it to mix with your next batch of too tart cider.

Acesulphame Potassium. My fear is that it's too sweet. I got my calculations so muddled that i don't think I have enough tart cider to save it.

If it is bottled you may be able to use it up as a sweetener for future batches by just adding a bottle or two.
Otherwise I would think it is a lost cause.

No acesulfame-K won't ferment and it's not particularly pleasant either, especially if you've used 50x too much. I should use it to sweeten your other cider at the rate of one to forty-nine. I wouldn't attempt to drink the rest- perhaps best to chuck it and start again. Perhaps use lactose next time.

Ok that is what I assumed. It was late on a Friday and was tired. Didn't check source of info properly for sure. Facepalmed myself this morning when I realised what i'd done. It's quite a lot of cider so i think i'll use it to sweeten off other batches as far as possible.

Won't be making the same mistake next year!
