Today's brew was inspired by (ie mostly copied from) @An Ankoù's Red IPA that placed second in July's forum competition, which I was privileged to judge. I've made a few changes to the malt bill just to suit my own tastes. I've added a little Munich and wheat malts, which I tend to add to most of my recipes, and some caramunich because I just wanted a little more caramel coming through. If it's anywhere near as good as An's then I'll be happy acheers.

Got an English IPA on yesterday with a recipe inspired by the English Red IPA posted by @strange-steve a week or so back on this thread (thanks!):

5kg Maris Otter
500g Pilsner
300g Medium Crystal (150EBC)
300g Caramalt
125g Dextrine

25g Magnum 60 mins

25g Fuggles 15 mins
25g EKG 15 mins

25g Fuggles 80° steep
25g EKG 80° steep

I'll probably dry hop too but not yet sure if I'll use both EKG and Fuggles, or just some EKG.

Had a bit of a disaster mashing as I managed to start mashing in without the malt-pipe fitted to the Robobrew! :oops:

Saved it by tipping everything into a spare FV but lost temperature in the process, slowly ramped it back to my target 66c for an hour and got 1.060 after the boil so hopefully got away with it!
 
The wife's away I have a 2hr window to brew before going on the lash.
No boil no chill American wheat beer.
3kg base malt
2kg wheat
700g Munich
200 carapils
100g acid malt
Hops:
100g centennial
100g equinox
50g cascade
The plan is to mash for 45 then bring the wort to 80 degrees bang hops in and put in the cube to chill.
First time going with no boil. Be interesting
Just dropped this on a week old yeast cake of S05. By far the easiest brew I have did. OG 1.051

I hope it turns out well, I bottled mine on Saturday and preliminary tastings were good acheers.
 
Brewed a Czech Dark Lager yesterday, first time brewing a Lager.

Only had time to get it chilled down to 20c with the chiller so left over night in the fridge to get down to pitching temp. Not only do you have to Lager the beer, it takes longer to brew too..hope it comes out nice.
Memories of pork knuckle, chips and Dark Lager in Prague:onechug:
14 l batch used Tesco Ashbeck water to try and match softer water profile. That's the plan anyway.

I have been seconds away from doing this on my Robobrew..had the grains in hand..paused.. something is missing..noticed the malt pipe sitting on the side. I have done this when doing BIAB and and to do the same.
 
23L AG American IPA with Cascade and Simcoe hops. What a complete cock up, started the day as usual heating water for the mash and sparge, whilst this was happening I thought I would get the hops out of the fridge and freezer but not alot in the freezer and none in the fridge!! with what I had I would be able to do the bittering and the 10 min to go addition, and dry hop for aroma when I get some more hops next week. I thought after I added the first hops at boil I must check the yeast in the fridge(was going to use M44) low and behold no bloody M44 in my yeast container or any other but cider yeast, so I added two packs of cider yeast :oops: Don't know what this will be like but thought it better than just throwing away at this stage. I will let you know how it goes.aheadbutt

Brewed 12 gallons of Wee Heavy today, based on the Brewing Classic Styles recipe. We did it BIAB-style with 46 lbs. of grain. O.G. was 1.086. Fortunately we have friends with ducks and chickens who will put this mass of spent grain to good use.

Two comp beers brewed last two days, may have to repeat both, my Citra IPA, I added one charge of hops way to early, 60 min instead of 20 mins.
My Pilgrims Progress best bitter, my Guten went out with a bang, I had already sent for new screen and circuit board so hopefully elements are OK.
Transferred the wort to the Brau Wolf which is a bigger diameter so the boil off increased ended up with a OG of 1,050 instead of 1,045. Was really looking forward to this one, Pilgrim hops bittering and Progress for the finishing hops.
Anyone with Klarstein, Brew Devil Brew Monk Hopcat etc etc, just be careful of leaking tap, got up this morning noticed water on the floor, saw it was the tap gave it a bit of a turn and it stopped. Expected the water to dry up quickly, hot night and morning noticed it was still dripping, not from the tap but underneath. The water from the tap had ran around the fold seam and into the electrics, the dripping stopped and the mash carried on 75 minute mash, into mash out, the bang. I thought I had got away with it after the 75 minute mash but unfortunately not.
 
Made the most of time off over the festive period to brew an east coast style pale ale today with amarillo, cascade and my favourite hop mosaic. Hit all my targets and finished and cleaned up in under 4 and a half hours so all good. It all went so well that I felt I must have forgotten something... the Irish moss - so it looks like this will be a good test of how much difference using Irish moss makes to the finished beer wink...

just strained a couple of gins done earlier this year...on the left, blackcurrant,on the right,redcurrant.
The blackcurrant tastes like alcoholic ribena! The redcurrant is more subtle.
 
Just switched on the boiler to heat the water for an imperial stout. I’m going to brew late tonight finishing the brewday somewhere around 1am, hoping I’ll be the first forum member to finish a brew in 2020, unless an Aussie has beaten me to it!

Yes, it’s an induction hob. I use it during the mash if the temperature is dropping and to heat to mash out temperature, as I don’t want to use the boiler’s element for that.

So does that work with a standard stainless steel pot or do you have a specific type for the induction hob?

I’m certainly no expert (I just tried it one day and was pleasantly surprised it worked!) but I think most decent quality stainless steel pots will work on induction.

I am looking at doing an imperial stout for my first of 2020. Did you use and Candi sugar to bump it up. I was thinking about aging mine with toasted oak cubes.
