Quickest (2-3 weeks?) & Most Drinkable Brew With Limited Equipment

I'm locked down in my in-laws place for the foreseeable, and I've got very limited equipment up here. Well, plenty of apple scratting and pressing gear but I'm about 6 months early for all that!

What would you recommend I brew to get something worth drinking in the next 2 - 3 weeks?

Frankly, I'll drink anything :)
My luck with beer has always been a bit **** but I'll have a go at a high quality kit.
Best results in recent years have been with cider, mead, elderberry wine & raspberry "cider".

I do have a fair stock of cider here though so anything else would be good.

What would you folks suggest?



Equipment available
  • a fermenting bucket
  • Belt heater
  • Ink bird temp controller
  • a load of plastic bottles.
  • S-shaped airlock
Happy enough to buy hydrometer, ingredients & sanitizer but don't want to duplicate any of the rest of my kit
 
Something like a Coopers kit will be fast and easy. Make it with some extra DME and let it roll.

Can probably get away with seven day ferment then ten days minimum in the bottle. Age helps though.

Maybe I'll give that ago. I hope all the brew shops are still delivering
 
I've also had a suggestion via DM (as it's not beer) of a shop bought fruit juice based wine which can turn around in about 10 days

As Chippy says, a WOW (supermarket fruit juice) wine can come good fairly quickly. My suggestion during these odd times would be one made with 2L apple, 1L pineapple and 500g ish of sugar, plus the rest of the things the thread suggests you add. You'll end up with a drinkable, slightly Chardonnay wine of about 15%. You should be able to get the various chemicals, yeast etc that you need online. My recipe on my blog here.

Sounds like you have all the makings of happy few weeks ahead.

Sadly I'm still working 50 hours a week, so I'm just going to cram it all in over a Saturday and watch and wait

Ah, not so good then. I hope you get a bit of time to brew and enjoy the fruits of your labour.
 
Anyone know if wheat beer kits have a similar timescale to an all grain wheat because you can have something fantastic in 12 days brewday to cracking a bottle. 50/50 pale/wheat a wheat yeast and whatever hops you want. I've done it with S-33 as well as wheat yeasts and it's still grand.

I I do extract wheats and yes they are ready very quickly.
 
My general impression of wheats is that they're super strong, is that right?

Hell no! Imagine a lager, but with some flavour and after you've had a glug you wait and then get an aftertaste. I know a lot of lager drinkers are like pfffwhatchasayin?? right now, but it's like a bonus flavour that comes after and it's more than often fantastic - better than the actual swigging. Oh god - I'll find something to explain what flavour is and link to it. For now, lager people, imagine you swallowed something, then you smile and nod and then pat your tummy - yeah? The tummy, that's the bit in the middle where the beer goes until you need do pee-pee, yeah?

Aftertastes can include:
A delicious grainy biscuitty thing.
An orangey thing.
An almost ice-creamy thing.
A banana-ey thing.
A not being lager thing!!!!

I enjoy the entire spectrum of flavours in beers and sadly lager kits are in the ultra violet and that's why wasps primarily live in beer gardens.
