I have a fair stock of supplies, especially hops (thanks to a recent group buy), and I'm planning on my first NEIPA. I've been looking at recipes and articles but I'm feeling a bit overwhelmed, there's so much info out there and it's causing a bit of recipe blindness and confusion from all the conflicting opinions. .
I'd like to not buy anything new and use up some of what I have in. How's this looking as a grist?

I do have some pilsen in too but was thinking of saving this for a lager or pseudo.

For hops, I have plenty of mosaic and el dorado which are definites, thinking of throwing some cascade in (and a few other small amounts of some user uppers like Opus) and possibly ekuanot. Otherwise I have hallertau blanc and ctz too, would these go, you think?

I have lots of dry yeast on hand, windsor, us pale ale from CML, nottingham (gervin), S-04. I also have a bit of kveik voss which is open but might save this for something else. Thinking I'll probably go with S-04 but read of someone using a dual pitch of notty and windsor...

Bit difficult to read, but your malt bill isn't too far off mine, a few differences but I can live with that.

I'll probably stick to El Dorado and Mosaic as the biggest additions and any open packs I want to use up on top.
 
Not really going to hit a neipa style with the yeast choice. With the grain drop the carapils and munich

I read here that S-04 is ok for NEIPA. Best Yeast For Brewing NEIPA & Hazy Pale Ales

It might not be the perfect choice but I don't want to buy anything new so I'll give it a shot. I think it's the best of the choice I have.

I only have 3kg of Maris otter extra pale so if I drop the Munich, I'm well below my target SG. I could sub in a KG of pilsner malt? Would that be better?

Yes, keep it pale.
