I have a hop bine of unknown variety and therefore of unknown AA and was looking for some advice on how to use the hops and maybe a recipe.

I'll be using a Grainfather, so will be brewing a 25 litre batch but am a bit concerned about the pump clogging. Would a muslin hopsack be a good idea as I don't have a hop spider? Or maybe a hop tea as I know I'll lose an awful lot of wort.

Any other suggestions etc gratefully received.
 
I'd bitter with something you know then bung them in at flame out,80c.
Thanks Clint. I used a Batham's Best clone recipe as a base (just Maris Otter) and it's nice, but you can really taste the malt. The next batch I made, I doubled the quantity of wet hops, but have yer to taste it.

I did something similar recently with my home grown Fuggles. An English Bitter, Challenger for 60 mins then my Fuggles at the end of the boil. Kegged it last weekend. Will give it a try when I’ve finished my keg of Summit Pale Ale.
 
I have three known varieties. For each, I make a pale ale with Magum and then divide the entire crop between late hop / flamout additions and a <80C rest. Centennial makes an amazing almost perfumed beer, cascade is good without the perfume and it's the first time for the challenger so I don't know what to expect.
It beats trying to dry and store them and then guess the alphas. I strip the bine while the beer's boiling for maximum freshness.
