Few bottles of my European pilsener ( dry hopped with saaz ) to get the evening started :beer1:

Just had a Mango Gose with a fish curry - which was an exceptionally good match - preceded that with a very good Wit from Kettlesmith.

Given I have no intention of seeing 2021 in, this will be my last drink of the year....

First off was a Whitstable bay Pale followed by a Greene King IPA, AG ESB next, then 3 more Whitstable bays and just finished an AG APA. JD and Coke to finish off the evening, Happy New Year to you all, see you on the flip side athumb..

I am fairly new to doing partial mashes, but have now got the room to do some all grain batches all be it 2.5 gallon batches and I have noticed that you seem very keen on the summer breeze beer, could you put your recipe for said beer on the forum as I would definitely love to brew a batch. Cheers 🍻

In fairness he's very keen on most Beers. So watch out that man's a bad influence 😜

Mash is well under way with 45 minutes remaining. Today’s brew is my Summer Breeze ale. The recipe has been published two or three times but I’ve listed it again here because this is the ale I’m brewing today. I’m making two minor changes - reducing the bittering addition from 20g to 15g, reducing the hopstand from 30 to 20 mins.

I’m also using pellet hops because leaf has become more challenging to source at the moment - certainly for Galaxy.

Summer Breeze
4.5Kg Vienna malt
500g malted flaked oats
250g Torrified wheat
75 min mash at 150F

15g Magnum Leaf AA=15.3% 60 min

1/2 Protofloc tablet at 10 mins
50g Citra leaf AA=13.6% at 10 mins
50g Galaxy leaf AA=12.6% at 10 mins

Cool to 165F for the hopstand
50g Citra Leaf AA=13.6%
50g Galaxy leaf AA=12.6%
Hopstand for 20 mins then cool to 70F

22 litres in the FV, OG =1048
1pk US West Coast yeast
50g Citra leaf on day 7

Barrel on day 12, FG=1008

If you are easily led a stray, and enjoy a good beer you probably have found the right place.Just be aware it can get expensive quite quickly, but great fun.....happy new year all!! acheers.
 
Cheers mate, appreciate it and will let you know how it turns out when brewed. Plan to bottle this brew ; what volume would you suggest I use at priming, not to keen on over fizzy beer.. best wishes and a happy new year to one and all. Hoppy brewing guys and gals.. 🍻🍻👍

😲 You’ve just hit my Achilles heel. I don’t tend to bottle ‘cause I screw up the carbonation. Probably 2.5 (6.6g/litre) but adjusting to your own tastes maybe go for 5g/litre?

It also depends on how quickly you want to drink the beer because carbonation improves over weeks. You could go 7g/litre for beers you want to drink in a week though to 4.5g/litre for beers you intend to keep for a couple of months.

The safest best is higher carb - you can knock the gas out by stiring with a knife.

ps my corny keg is set at 12psi
