Used a full fresh pack of yeast (no starter) and no it wasnt an overnight mash, i just did the mash the night before and left it in the pot over night (minus the grains) to save time the next day. Thermometer is quite new and i checked it the first time i used it. Aerated wort and pitched yeast...

I didnt do a mash out or cool the mash. After removing the grain bag i topped the pot up a bit with some sparge water, put the lid on and left it over night.

I have a 15L and 5L pot. I use the 15L for the mash (with a grain bag) and boil. I squeeze the grain bag and then stick it on top of a metal colander in my fermenter and run the hot water from the 5L pan through it and the use this "sparge" water to top up during the boil. To save a bit of time...
The main reason i added it at the end of the boil was that for some reasotn i'd got a jar of set honey so it wouldnt pour out if the jar , if i do another i'll make sure its the clear pourable stuff and will add it at when pitching the yeast
I've added honey to a couple of brews. I think the nicest one had about 250 - 300g in a 15L batch. Had some biscuit malt in and combination of fuggles and goldings. Just added the honey a couple of mins from the end of the boil, seemed to add a nice delicate hint of honey.

I have been keeping things simple lately hop wise and using only Goldings or Fuggles. Fancy trying a different hop this time and wondered if anyone had used Bramling Cross recently?

Yes, think i might have jinxed it as just opened a 2 litre bottle and it was definetly on the way off; same smell and slight sour taste has developed. Never had this before, where does it normally come from and do you think i will have got rid of it?
Quick update. Nothing sinister developed in the bottles and its tasting ok so can't have been infected. Left fermenter full of strong bleach / water solution for a few weeks, to make sure, and just bottled next batch which seemed fine. Cheers all Alan
It's down to 1.016 so think i'm going to use terrym's suggestion and bottle it in some water bottles. The sample tastes fine and smells quite normal. Fingers crossed. Thanks for the replies. Alan

Brewed a mild using my same equipment and BIAB method, only difference is that i pitched some more dry yeast after about 10 days as it seemed stuck at 1.024 ish. Checked it today and there is quite a strong smell (hard to describe maybe like spray paint??) and a strange white film...
