    Those Pesky Flies....

Hello! It’s been well over a year since I posted on here regularly, and it’s good to be back. I’ve taken a break from brewing, but am now getting back into the rhythm again. I had some old malt and hops to use up so did a usey-uppy which is drinkable but nothing special. At least it will keep...

Recipe check - Belgian dark strong ale

Re the time to ferment thing, I’ve just bottled a Dubbel after 4wks and 2 days in primary. it was og 1067, and took a week to get down to 1050, then a further two to get to 1012. Ended up 1008 when bottled. I was a bit concerned about the time it was taking, particularly in the first week...

    Brewtime AG #12 - Bock

Hello again, The ABV was in the region of 6% in the end, from memory. I had a Kronenbourg Brun in the summer in France, which also said Bock on the label. I firmly believe that mine was nicer. I use 50cl bottles, as I prefer something a bit larger, as I tend to only drink one or two at a...

    Brewtime AG #12 - Bock

Mmmmm..... Nice! That’s the last one, sadly.

    Brewtime AG #12 - Bock

Sorry, my mistake. You’re spot on. 2 weeks at 12c, then 4 weeks at 2-3c. I used a proper Bock yeast, too. WLP833 German Bock Lager Yeast from White Labs. Found a bottle tucked away in the garage. About to be opened.... Dog.

    Brewtime AG #12 - Bock

Hello, It was absolutely beautiful. I’ve made it again since as I had extra ingredients and it was just as good the second time. Takes time though. 2 weeks primary at 22c, then 4 weeks secondary at 12c. Then 2 weeks in bottle at room temp then 2 weeks in bottle at 12c or garage...

    Brewtime AG #12 - Bock

So, this turned into a bit of an epic. Also turned out to be AG#13, not 12. The issue I found with starting a brew spontaneously, is that everything takes a bit longer than you think, as it hasn't been properly prepped, weighed, timers set and everything. I got to bed at midnight in the end...

    Brewtime AG #12 - Bock

    Bottling - Big bottles

I've started collecting prosecco bottles from SWMBO and her mates. They get through a remarkably large number of these.... The labels can be tricky to remove. I use plastic champagne corks and wire cages from the local HBS and have just bottled my first batch partially into these. Only 4...

    Bottling a Bock

Well, here is an update. It is now lovely. Has a great head if I give it some when pouring, and is clear as a bell. I brought it indoors for a couple of weeks from the garage, to help with bottle conditioning. Seemed to have done the job. That and time, of course. I like it so much that I am...

    Hop Pellets and Clogged Bazooka

Thanks guys. I'm going to try the muslin bags first, then nothing at all for the next one, and see how I get on. Cheers! Dog.

    Hop Pellets and Clogged Bazooka

Hello, I have got some hop pellets for my next brew, as HBS didn't have leaf, and reckoned he gets no problems with clogged filters after using them in the boil. I'm sceptical about this, however, and would like your thoughts. I plan to get a hop spider at some point soon, however at...

    Pellet or leaf hops?

I was reading this following a chat in local HBS today, and he thought leaf was on the way out. I got some pellets instead as that is pretty much all he had of what I was after. I do need to find a way of filtering them out in the boiler though, as last time I used them they clogged the...

    RecipeIdeas, Please

I've been mulling this over today, too, and am adding a Christmas brew to the list. I want something that I can substitute for Port*, as an after-dinner tipple, while the fire is roaring, the kids are a-bed, and the wind is howling outside. We're having Christmas in Cornwall this year, so it...

    AG#11 - Galaxy SMaSH

Ooh, didn't know there was a comp.... I used a sachet of Safale 04. It's all krausened up now. Smells rather bootyful.
