    Just to say it's bubbling away quite fast now, this is day 6 so I think I might have a good one on the go, it's god a great color so I think she will be a lovely rosé when done. Thanks roddy for your reply , it's good to get reassurance.

    I used 3 bags of elderberry , 1 and half bags into 2 pots and simmered for 15 -20 min then mashed them and let sit for 2 hours. Then cut a net type dress my wife had to squeeze the juice out of the berries. Put the usual chemicals in and let fire away... It was a fast active fermentation...

    Hey dunlin. Yea I just threw it all together. Mashed and boiled up the elderberry. Strained it. Carton of apple juice. And 3\4 lb sugar. The usual chemicals citric and all. If your using tannin don't go mad, the boiling helps . Hope it helps a bit. Keep me updated on your success.
