    Part of that is the fact that it is brewed out to a higher abv, when I make strong ginger beer once it's taken and I've tweaked it and had later additions as weeks go on it isn't phased by such mortal things as oxidisation or having that flat or still flavour as it's a force to be reckoned with!

    If you wanted to get really creative use water from the wort chiller to sanitise the inside of the bottles, if it's cold water coming from your tap then there's no extra cost - you are just using the transferred energy from the boiling/boiled wort to now sterilise the inside/out of the bottles...

    Yeast for smaller batch brews

    As said above it will be safe to use half and just roll it up to reseal it It's what I do with champagne yeast which I buy 100g's of at a time and it still works great - no off flavours or tinges, because I'm careful (mostly) when putting it back in the fridge
