    Super Bowl

I see the Super Bowl will be televised in the UK. Any fans of American football on the forum? If so, who are you cheering for? I'll be cheering on my hometown Chiefs and will be having some KC style BBQ. [ tailgating at Arrowhead stadium, you can almost smell it] cheers

What are you drinking tonight 2022?

It's Christmas morning here but tonight I'll be sampling an 8.8% Baltic Porter that has been lagering for a month +. Then have a few dry hopped Strong Bitters. cheers

Merry Christmas to all on the other side of the pond and this side too. To all my German friends from my time there in the service, Frohes Weihnachtsfest!

    Maris otter

Thanks for the reply. I think I've seen Fawcett's malt for sale on a few internet homebrew sites and will give it a try next time.

    Maris otter

I recently brewed an English Strong Bitter. [ cat 11C in the BJCP 2021 guidelines] It came out well and I used Simpson's Maris Otter as that's what my LHBS carries along with their Golden Promise. I also used a small amount of Simpson's DRC and some invert sugar made with demerara sugar. The...

    Boiling liquor to precipitate chalk

I was going off the OPs tap water report that seems to be temporary hardness with a very high carbonate figure. The welI I mentioned had harder water than the water dept I referred to. The city water dept uses surface water high in alkalinity and has a lime treatment to soften it. I myself have...

    Boiling liquor to precipitate chalk

"Lime softening was first used in 1841 to treat Thames River water. The process expanded in use as the other benefits of the process was discovered. Lime softening greatly expanded in use during the early 1900s as industrial water use expanded. Lime softening provides soft water that can, in...

    Boiling liquor to precipitate chalk

Another method of reducing alkalinity in the brewing industry is the use of slaked lime. A large city near me uses this method to soften drinking water. This method uses no boiling water only lime such is used in canning. https://braukaiser.com/wiki/index.php/Alkalinity_reduction_with_slaked_lime

    American Brown Ale an appreciation.

This is a recipe, one of several, for Janet's Brown ale. This is a big beer and little out of the guidelines for the style. One could leave out the corn sugar to take it down in ABV like the directions say. https://www.carlsbadbrewsupply.com/images/pdfrecipes/BigBrew21-Janets-Brown-Ale-Recipe.pdf

    American Brown Ale an appreciation.

I've not had a Hobgoblin, but it sounds delish. I would say different yeast and hops and more chocolaty maybe. Here is the bjcp.org description in cat 19. You can compare with the American Amber. More chocolate and caramel flavors than American Pale or Amber Ales, typically with less prominent...

    American Brown Ale an appreciation.

Cascade and Willamette go well together to my tastes. Amarillo and Centennial are favorites too. You need a clean yeast like Chico type or Bry-97, Verdant is too fruity. But if that's what you like go with it.

    American Brown Ale an appreciation.

American Brown Ale is great for Fall and Winter. I brew one every year with Nugget, Cascade and Willamette homegrown hops. Nugget for bittering and a mix of the Cascade and Willamette. I now have a couple of Vojvodina hop plants [ cross between Northern Brewer and a Golding male] that I plan to...

    Dextrine malt for head retention

A note on beer clean glasses. To check cleanliness of glasses rinse with water and dump excess water out. Hold glass at about a 45-degree angle and sprinkle salt down the insides all around. Anywhere the salt doesn't stick needs to be cleaned and has oil or grease. You can use the salt to clean...

My condolences on the Queen's passing to the people of the United Kingdom, the great and steadfast Allie to US and the free world. 😢 I had always admired her composure and passion for her country.
