    Some new hops need some new ideas please!

    Ludlow Brew Co has/had a beer called Stairway with Marynka as its bittering hop and Sladek for flavour. I really enjoyed it, pale and 5.0%.

    ...and there are no suggestions for yeast as when the recipes were written homebrewers all used the same one (the only one on the market, pretty much). All told, the recipes make for a good pint though and make a sound starting point for whichever beer you're trying to clone.

    There are recipes in Marc Ollosson's "Real Ales for the Home Brewer", for both Wildcat and Stag.

    Yeast

    I was attracted by it as it's STA1 negative so brewed my usual saison recipe with it. It certainly tasted like a saison and was quite close in taste to one I drank in Belgium. It was probably a bit too 'farmyardy' for my taste but the yeast performed well with good attenuation.

    I reckon a £12k wine would be a bit wasted on me. As would a £1.2k and a £120 bottle. I might risk £12 if it was a birthday or something.
