Got to ask, why so much sugar? Does it all brew out?

Mine restarted when I chucked in some extra yeast, (Young's super.) Just about finished now.

I've not added pectolase either, I'm trying to be as minimalist as poss. Hoping for better than "meh". ;-)

I've started two demijohns of "Innocent" apple juice, using Young's "Super wine" yeast. Reading some threads here it looks like I should have used a "cider yeast". Predictions? Thoughts?

I was living in Australia, when I got the call that my mam had days left to live. She'd had cancer for some time, so this was not unexpected. I flew back, and got home to South Wales. One night, just for nostalgia's sake I visited what used to be Mam and dad’s local, back when I was a small...

Call me boring, but I've gone back to basics. No more "guava, star fruit and lychee" wine for me, too many disasters. Pure, ordinary, wines from apples and oranges, (maybe grapefruit.) Risking it I know, but is there any white grape juice going anywhere?

Cheers butty. But is it still cider even if it makes, say, 16% ABV?
