    I had 3 deleted too for mentioning the unmentionable. You missed out on a good trip, some very remote areas here but they are magnificent. When you think about it Tassie is the same size as Ireland roughly with only one tenth of the population.

    Sounds like you are grasping at straws. If you dont enter competitions how do you know how your beer is faring? The best way to know is enter competitions and get the feed back.

    If you want something simple for dispensing beer. If your having a party get the back pack sprayer for genuine cask ale, from a garden sprayer.

    Have you read the PDF for set up? I had one but had the same problem as Matt_W . Once krausen starts sticking to it just gives out false readings. Cant go wrong with an analogue hydrometer. Binned mine too.

    I like Emu and would imagine that it needs cooking the same as Ostrich it is low in fat and has to be cooked rare. Overdone you can sole your boots with it. I do like all my meats cooked rare. The one thing I have a problem with is octopus. Never ever got it right.

    How much caramalt should I use?

    Try some light Munich or Vienna for a bit more sweetness. What is your mash pH? A low mash pH can make a beer seem dry.
