A brew inspired by "The New IPA" hop book I've been reading. Its just Maris Otter for the malt. The hops are Mosaic, Simcoe and Calypso. Going to be dry hopping during the ferment and the yeast is going to be 90% Verdant IPA and 10% 71B-1122 wine yeast.

I started off thinking it was a cheat until I found an original recipe (from the head brewer at the time) for Deuchars IPA. He said they used it to control the colour. It should work really well in a Saison (must make another one, I always like it).
How bad does it leak ?
These days I’m usually bottling from an FV that has a tap and I just turn that to stop/start flow through the pipe. There’s always a bit of leakage but I just ignore it.
Appreciate you may be syphoning, so no tap but maybe a bit of leak is ok. Or is it a gush ashock1
I reckon my boil off is around 2 - 2.5 litres per hour too. So, like you, I’ve adjusted brew father.

I did a similar thing. Conditioning bottles in a chest freezer brew fridge and left the temp probe dangling outside. Lolly bottles when I looked the next day. They all survived though. :D
Probably could draw it 99% accurately and read back off that (cheating I know).
If there had been a 8 or 9 minute data point excel would have calculated the slope (another cheat). 😁
