    I agree with adding a bit of dextrose to the boil (about 200g for 23l is fine). Mashing at a slightly lower temperature can help with the sourness as well.

    A Plaato Valve also does what you’re describing, although they might be difficult to get hold of now that Plaato don’t seem to support their products. It’s a simple one way valve that fits inline with the blow-off tube from the fermenter

    I don’t think it makes any difference whether it ferments or not (for the alcohol based flavours at least). Just make sure you add a little at a time and keep tasting as it’s easy to go from subtle to overpowering.

    Brewtools recommendation is to trisodium phosphate clean to get rid of manufacturing residues and then passivate to restore the corrosion resistant film on the stainless steel. It’s a lot more thorough than the sodium percarbonate clean that you might do as a regular clean
