Banana wine

Banana and lemon curd wine started today! My instincts tell me this is gonna be a favourite! Smells amazing! šŸ‘

Here is what I put in it:-

2 x jars lemon curd
4kg bananas, topped and tailed and sliced in skins
1100g white sugar
100g demerara
500ml concentrated grape juice
zest and juice of two oranges
zest and juice of two lemons
yeast nutrient
pectolase
CML orange yeast
9L of boiling water (simmered the bananas for 45 mins)

After more squeezing than the picture above shows, I ended up with 12L of must.

Starting gravity 1.088 šŸ˜Š

It's happily blipping away at the moment. I really do think this is the nicest thing I've ever made.

Having seen a member post pictures of the beginning of his tomato wine which looked awful but apparently tuned out very drinkable i have stopped predicting the outcome of wines. ;)
 
Lol! Dont get me wrong I hope it works out for you- just have visions of a manky fermented banana puree a la my school bag pocket at 14 which got me stopped by a sniffer dog at LA airport!!! As i say please keep us updated šŸ¤£

That reminds me, the Marmite wine has been sat ageing (being ignored) for a few months. I need to try it again to see if it's worth another go with a modified recipe.
 
I normally buy banana's from Tesco when they have reduced them because they have started going soft, I can buy enough for 2/3 gals wine for less than a pound.If I don't have enough time to use them straight away I peel then freeze. I normally use the wine or banana's to add body to wine when needed.
 
@LisaMC What receipe did you use for the banana wine? I'm very curious and intrigued.

I just made it up, it is based on something I saw on YouTube though, but I changed it up a little. I have written down exactly what's in it, in my original post at the top of this thread šŸ˜

A note for new members watching the video i would fill the first bubble in the airlock to the top, with the amount he uses there is a risk of it drying out in a warm cupboard fermenting for a fortnight. (better safe than sorry)
